Is my rye overcooked? (Pic)

I think I might have overcooked the rye again - though, I don't know how so I'm not sure.
The sterilization was at 15 PSI for 1 and a half hours, so I doubt anything went wrong there. Maybe I boiled it too long - I was waiting for the first kernels to open, so I boiled the rye maybe for about an hour or a little more. Anyway, now the grains look like this:

What do you think? Can I still use them?

I think they look fine, maybe a bit wet but I wouldn't toss it

Those look fine. You don't want them to open. We call those burst grains and we generally want to avoid that as much as possible.

they dont look overcooked. however they look a bit wet. did you steam dry? if so, did you maybe do a paper towel test, or even touch test?

They look too wet to me. Is that water pooled at the bottom?
Boiling for an hour seems excessive. You should only need to boil them for about 10 mins after the soak. Did you soak them?
After you boil, let them sit in a strainer for a couple of hours, shaking occasionally to let steam off.
I hope you didn't rinse them after boiling.
If those were mine, I would toss them and do it again.
Take a look at my Rye Berrie prep in my signature. I no longer use the towel drying method. I just leave them in the strainer.

a couple hours after boiling? damn. at most i only have to let steam dry for a half an hour. and thats alot.

i just use a spoon and stir them up here and there. bringing the grains at the bottom of the strainer to the top, and repeat every so often. a couple hours though? thats nuts.

I have two strainers. I pour them into one after the boil. Then within 5 minutes I transfer the grains from strainer to strainer a bunch of times. This lets the steam carry off most of the excess water. I load them into jars and PC them right after that while they're still hot as shit which I figure helps the PC do it's job quicker.

how many quarts do you do in a cook? i do 14. so i have like 6 strainers. no option of transfering from strainer to strainer. im planning on making a bucket into a strainer. either by, drilling a ton of holes on the bottom and sides. or cutting out the bottom and somehow adhering a screen in place of the original bottom. and then just stirring from time to time. would be so much more efficient. especially as its getting cold out. its hard for me to strain indoors with 6 strainers as my sink is only so big and id have to carry them all upstairs to do in the tub. so nice in the summer to just line the strainers up on the driveway or deck and fill em up and once ina while give them a stir.

I have 2 strainers to strain out the initial water, then dump them into turkey roasting pans. Its about the surface area that will dry the grains quicker and evenly.

keep turning your steamed grains every 5-10 minutes. Grains will be perfect in about 30-45 min

about 20 quarts. I use 2-3 pots though and cook one after the other. too many quarts in a pot can get messy and hard to evenly cook.
Roasting pans are like 1-2$ at the dollar store. easy to have a bunch and use them when doing large spawn runs. You want to have as much grain exposed to air as possible when they are still steaming hot.

I do 4 quarts at a time only because I have a small PC. I would do the same thing with 4 6 or 8 strainers in a bathtub instead of just two strainers in my sink for 4 quarts. It may not be feasible when doing such big spawn runs though.

Ok, thanks for the replies, I decided to use those grains. It seems the burning occured mostly only on sides - when I shook the jars a little, nicer grains appeared.
And yeah, probably my straining technique wasn't the best - I only had a small strainer, so some of the grains were a little too wet when starting to PC. Maybe the wetness in the jars in the PC might have something to do with the "roasted" effect?

I took around an hour and a half to dry, and I used a hair dryer for 5-10 minutes at the end just to make sure. Most of your moisture is inside the grain anyway. Better to be as dry on the outside.
IME PC'n tends to add some additional moisture to the jars, so you definitely want your grain to be dry before loading them into your jars.

Wanted to let everyone know that it took a while (about a month) for the jars to colonize but eventually they did.
