Couple Q's on first grow

I'm well into my first grow now. Three PF tek BRF cakes in a SGFC. I birthed one cake about 10 days before the other two. The first one has given me about 3 grams of dried fruit, the other two are not pinning yet.
What's the best way to pick a fruit? I have been twisting them at the base, which works fine but it leaves a spot on the cake where it looks like the mycelium hasn't fully colonized.
The second and third cakes aren't pinning, but they both pinned invitro. After birth, the pins didn't continue to grow so I picked them. Any ideas as to why they aren't pinning now? They have been in the SGFC for one week today.
I am misting and fanning 3-4 times a day, with about 8 hours of light. Sufficient? More/less?

Do not twist! As you said it leaves uncolonized substrate where contams can enter
Cut with scissors as close to the base as you can
Pins can take up to 12 days I hear
Personally thats crazy IMO not to say it doesnt happen , but I almost always get them within five days
You either have a contam in those two cakes or its your FAE which is more likely IMO without pics
I did cakes once and didnt like it so my knowledge is based on bulk grows I still think its relevant

Possible.... Your jars stalled. If that's the case I'm sorry man. Second option, dunk the cake for a couple hours and put it back in the sgfc. Did you dunk and roll before putting second cakes in sgfc?

I did not dunk any of them first. I was going to dunk and roll for the second flush. I think I'll wait just another day or two then try dunk and roll.

Dont twist because it leaves uncolonized substrate? Sounds wrong to me. The mycelium colonizes all of the substrate. Leaving part of the stem will cause it to rot and invite contams.
At least this is what I have read. I am new, but I am fairly confident I am not wrong on this one.

Im positive cutting is the correct method , feel free to wait till a TC comes and says the same thing , when I first started growing I did it , I had seen Youtube videos of it ,MANY of which contain outdated and wrong information.
The only video you should use when it comes to this is RRs lets grow mushrooms IMO

Yes use a clean sterilized knife to cut you are destroying your sub pulling them out

No stress , Im pretty sure I did the SAME thing hahah
I try to not speak about something unless I know it to be fact with a decent source that one being RR but I dont remember the thread and i wasnt gonna go look for it
Ive been growing for over a year and am pretty active on the forums so Id like to think I can help out with basic stuff ^.^
