Buffalo Wings

In honor of my favorite football team:

Get a big ass thing of fresh chicken wings - fresh are way better than the frozen and way cheeper too. Just cut the wing tips off and toss them and then cut the drummy and the other wingy thingy apart. This leaves you with two wingy pieces. Repeat for all wings. A family sized pack will give you 40 pieces and should cost about $5.

Deep fry the wings in peanut oil until they float - this is usually about 15 minutes or so - I usually give em an extra 5 minutes or so after they float - I like em crispy.

While deep frying, prepare the Buffalo sauce:

One big bottle of Frank's Red Hot - Franks is the absolute best and the original for the Buffalo wing.

Add in one stick of butter - oh shut the fuck up already - get more fat.

Add crushed red peppers to your desired temp. I like about half a bottle.

When the wings are done in the deep fry, toss em in with the sauce.

Coat and serve with blue cheese dressing or if you are like us westies, dip em in ranch.

I suggest starting with about 1/4 of a bottle of the crushed reds.

I like em hot!

Helps keep the beer flowing like the glory of Niagra Falls.

i mix blue cheese and thousand island dressing in a big bowl then add the wings and toss.Um they are great.

That does sound good - I'm always one for the spice. But as I understand it the 'original' buffalo wing recipie calls for Louisianna Hot Sauce (which I believe has been around quite a bit longer than Frank's). I also like to cut up some celery stalks for dippin' in the ranch along with my wings. Just my 2 cents -- oh, and spicy chicken wings rock!

I'm pretty sure that "Buffalo Wings" originated in Buffalo, New York.. and the place that made them famous used Franks. That's what it says on the back of the bottle on Franks, anyway.

That could very well be, but I'm sure people have been
making spicy chicken wings long before that place in New
York popularized them to international fame :wink:

Franks still rules though

I'd probably like that Louisiana hot sauce more if they put some garlic in it. It's too vinegery and not garlicy enough for my tastes.

That's an attribute so far as I'm concerned... and don't get me wrong, I like Frank's Red Hot Sauce quite a bit - but it doesn't leave as much room for personal tweaking as the L.H.S. does.  The L.H.S. has a spice to it, and it certainly has a tange of vinegar in it -- but it is a subtle flavour compared to Frank's, so the cook can add in as little or as much garlic as s/he might desire, in addition to a few fresh cayenne or habanero peppers, or even some mustard!  Experimentation is key :spliff:

True that.. I never really thought about altering my hot sauce. I usually just dump it out of the bottle and into my food.. or in some cases.. straight into my mouth  :grin:

fuck yeah, i live in buffalo, they originated at the Anchor Bar downtown, theys tasty!!! Even though anchor bar started it, duffs, which is also around here, make their wings SUPER hot! i like em' really hot sometimes. yumyum

It's hard to fuck up hot wings. Here in NOLA the basic recipe uses Crystal Hotsauce, with cayenne, black and white pepper, reduced until sec, then mounted with butter, and finally some crispy wings are tossed in it. Perfection needs no tweaking.

How much butter is added, is it made in a fashion similar to beurre blanc (i.e. holding up the emulsion, or just a bit swirled in at the end to mount?)

you said reduce to sec -- au sec? or demi sec? sec = dry.

I just tried some Crystal hotsauce the other day. I didn't care for it at all. You Canjun's got this sweet/tangy thing going on that I just don't really like.

This recipe can be used with your favorite hotsauce of choice.

For me, Franks does the trick.
