Lots of questions as a first-timer

I haven't bought anything yet, but I will be following this guide:

My main question is, how can I regulate the temperature with that set up? Or will I even need to? I live in WA so it's pretty cold this time of year.

Also, is just putting the jars to colonize on shelves like that recommended? Or is there a better place to put them to make the colonize faster? And what are those containers he drilled holes in called?

Lastly, do you guys recommend the substrate jars from http://www.midwestgrowkits.com/?
I don't have a pressure cooker and I heard those are good jars.

Figure out how to heat the room it's in...never heat the chamber.

Jars/bags/tubs/trays should colonize @ room temperature getting ambient/indirect light.

Main pinning triggers are full colonization, FAE and Evaporation off of the substrate.

Light is a secondary pinning trigger. For tropical species temperature is not a pinning factor.

P. Cubensis are a tropical species. You could colonize at 70F and fruit at 80F with great results.

Light has been proven beneficial during all stages of mycellium growth. Mushrooms like mammals have a circadian rhythm.

You want ambient/indirect light(on a 12/12 schedule preferably) for colonization and consolidation.

You want direct/intense 6500K light on a 12/12 schedule for fruiting.

Optimal temps are mid 70s throughout the whole grow, but anywhere from 65F-80F is acceptable.

Incubation is outdated/uneeded unless temps in the range stated above cannot be kept.

The inside of the jar is always a few degrees warmer than the outside because the mycellium produces heat..mycellium tends to stall at temps above 86F , and contams thrive.

Fruiting at cooler temps tends to produce denser, meatier fruits, while fruiting at higher temps will often produce hollow, less dense stems.

No, we always recommend doing it yourself.

Follow the tek, no pressure cooker is needed.

Just a big pot to steam sterilize them in.

I couldn't have said it better myself. Between those videos, and the above advice, the ONLY thing I could add is to be very patient. There are no shortcuts. It's all gonna be a learning experience.

What about humidity of the room? Is it something I should worry about, or will the perlite keep it humid enough in the chamber?

So, should I not worry so much about controlling temperature since room temp is around that range?

The perlite will humidify the chamber.

Pinning is baby mushrooms popping up.

No, it's what you go thru all this work to achieve.

Yes, any timer that will kick it on/off in 12 hour intervals will work just fine.

I would get a 50qt tub or bigger.

I use 66qt sterlite tubs and they work great.

Is any airpump recommended to achieve this? Or tips to achieve this? Sorry for all the dumb questions I just want to be thorough.

If I don't get pinnings in my jars after colonization is that bad?

Lastly, would it be safe to use this:

Follow the tek.

If the tek says to use air pumps, then use them.

But it doesn't.

And you do not need a hygrometer....just follow the tek and build the chamber correctly.

1/4" holes every 2" in a grid pattern on all 6 sides....then fill it with 4-5" of moist perlite.

Then place the chamber in a room with no running fans, raised so air can pass up thru the bottom holes.
