Well, I would get fresh coffee grounds, instead of using week old ones. If there is a starbucks near you, they give away fresh coffee grounds for free. So do most cafes, all you have to do is ask.

well, to start, remove all of the mold by hand, use a scoop and remove it carefully, then steam it or bake it to kill off spores.
Then if you are going to use with oyster mushrooms, just use a higher spawn rate. Should be no problem.

Pasteurize the coffee grounds to kill mold, spores, bacteria, contaminats etc. Get them to the proper moisture content and then raise their temperature to 140-170 F for 60 to 90 minutes.
It's best to use steam/water to heat the bags or jars of substrate. Try pack the moist grains into quart jars, put them in a big pot filled with water and heat the water on the stove.
if you bake the grains you can dry them out and then store them longer but come time to use them for a substrate then first you must hydrate then pasteurize.

So does starbucks. Don't mess with the green! If they don't have bags in the "grounds for your garden" bucket by the door, bring a tote and ask at the counter for grounds.
Even with fresh coffee grounds from Starbucks, you will want to pasteurize before inoculation.

Why chance your work? Pasteurize with heat or Ph

Throw them away.
Collect 1-2 days fresh Add lime 1 tablespoon per 5 kg Adjust sub moisture to 60-70% (press, drain; fluff it with cardboard or straw, e.g) Let it "cook" 24/48h
Bag it Poke some holes or use filter patch bags.
The time you waste collecting some grounds will make worth the spawn loss otherwise.

You can PC them. It's the wet that allows the mold to take hold. I always bake my grounds till bone dry, then they store till you need them.
I've baked, then PCed then used previously moldy grounds with no issue.

Lol that must make your house smell delicious.
This seems like a good idea. Do you use these grounds as a straight sub or use them to supplement other subs?

It certainly does! I do what others have mentioned and get a bucket or two to bake/dry and then save for later. Dried spent coffee grounds seem to clump easily, so I bring them up to field capacity on their own, then mix the wet slurry into whatever I'm doing. In the case of cubes I use it as an additive in the spawn mix, others use it as sub additive. Either works so long as your area is clean.
