If you ate one, you would likely have a threshold experience. Possibly one so mild that you would not feel certain you were feeling any Psilocybian effect. I don't know what you mean by dark edges?
Are you talking about the bruising along the margin of the cap? Or them not being dry?

How long they will keep growing will depend on your weather. If it dries up a lot, or starts to freeze, they will stop. They will come back each fall/winter until they run out of food (un-decomposed wood chips or debris).
You can harvest them when they look like the two mature ones in the second picure. Those are essentially fully mature.

I will also say that is is not uncommon to have similar mistrust and apprehension whenever trying a new mushroom in a genus of ramily you don't know well.
There are many mushrooms for which I know my ability to identify to safety and which I am still unaccountably hesitant to try.
Don't ever feel obligated. It causes [or compounds] unnecesary apprehension. This is particularly true for psychoactive subtances. It is better to me to lean more, in order to dispel these, than to go into a meal or experience feeling paranoid.
If you can take our reassurance here though, those are just what you thought they were.

If they're bone dry, sure. If you keep them long, keep them out of the light and keep them cool.
