So, Roughly how hard should I shake my cakes? Also, once @ 20%, 50% and 80% colonization?

You don't shake cakes. You shake jars with whole grain that you intend to case which makes it easier to put in the casing tray.

What anno means is, you don't shake BRF cakes. If you are using some type of grain, then you shake once between 20-50% colonization.

If you are using plastic jars could you squeeze the cakes to break it up slightly and help the mycelium run through the inside of the cake? :shrug:

This would actually be counter productive. You have to
take into effect the added time it would take for the mycelium
to recover. Before it actually begins to colonize again.
You could also possibly introduce a contaminate if not fully
colonized, by disturbing the dry vermiculite barrier.

Unless you are following a Tek such as this. That's tried and proven.
