So RiparianZoneJunky and I were totally a couple of old ladies last night.

We were making soup and baking cookies n' shit yo!

RZJ made a dope dobin mushi with a huge matsutake I found. And we made
candy cap cookies with the candy caps he had found.

Both were effing great. This morning I get a text from RZJ saying "These cookies should be a controlled substance." :lol:

So true. They are so, so, so, so good.

They could be G. aeruginosus, but id like to see micro done, im comparing the two tonight, ill let you know what i find.

To be fair he said he could be wrong. He was not definitive about it.

This is pretty fun figuring these two out. I will be happy when it is settled though.

I have a had time agreeing with this, luteofolius is active- it should bruise green.
I think aeruginosus is red and green, a lot more green then luteofolius. luteofolius seems a lot more purple than aeruginosus. Just :2cents:

howd the cookies come out? ive got a couple jars i want to bake for my class. got any tips? stuff that the recipes leave out?

Yes. A bit of nutmeg does not hurt. And nuts are nice in them.

These have no nuts.  :derdance:

And they came out fantastic. Really a great recipe.

Yeah its the Aroroa recipe. As far as nuts go you can pick your poison.

I think they were walnuts in the ones that contained nuts. I did not make
them so I am not certain.

If I were to do nuts I'd do pecan, but that's just me, the bitter of walnuts would be distracting for my taste.  We used Arora's recipe and added some nutmeg and cardamom.  Getting them the right size is key, the ones that turned out the best were about 1/8th to 3/16th inch thick and around 2 inches wide, any thicker and they don't cook through, any less wide and they get too crunchy.  I also added some mirin (sweet cooking sake) while sauteing the re-hydrated lactarius in butter.  These things are deadly, I'm not usually a big cookie fan, but it is really, really hard not to just sit don't and scarf them all down at once.

Just wanted to share what I have been doing with all of my mushrooms that
I don't sell.

I saute, dry or with butter. I do both. Also, Ill saute with butter and garlic on some.

I keep them separate.

Also, I separate by species.

I jar them and can them for later enjoyment. No worries about freezer burn.

10 psi for 1 hour.

and no flavor loss from drying.

The two jars that have only liquid are mushroom stock!

No waste here. It was from the left over liquid of about 510 lbs of chants.
