What do we try to kill and leave in when we pasteurize substrate?

From my understanding of this , we pasteurize so that we may leave beneficial organism in the substrate but not harmful ones?

My question is what organism do we kill and which do we allow to survive?

Is my question crazy due to something I have not thought of?

Any thoughts?

A short answer is we allow thermo-tolerant bacteria to survive and we kill everything else.

A list of thermo-tolerent bacteria that survive is a little trickier to compile, as its dependent on which are there to begin with and is quite substantial in addition to containing many families. 

One example is a bacteria well suited for encouraging fruiting in the standard button mushroom, Agaricus bisporus- Pseudomonas putida.

That makes sense I figured there would be a LOT

Do we just hope that the thermo tolerant bacteria is good and that that is all that survives?

Its not necessarily the bacteria themselves that are beneficial- its the metabolites created by the bacteria.  Of course you can't have one without the other, but the specific species is not the most critical concern (although some are demonstratively  better than others).  The important thing is to leave something alive.  If temps get too high, not enough life will persist.  If temps are not high enough, long enough, then other organisms known to be competitors of the cultivatable fungi will survive.

From what i understand, with oyster also the bacteria help break down the lignin into easyer accesible food for the fungi, and so you can get a lower BE if your pasteurisation temps are a bit on the high side.
Im very curious what kind of micro-organismprofile the lime bath leaves.

The biggest thing we're killing with pasteurization is mold spores.  Various mushroom species have relationships with bacteria and other microbes, but not all.  Many species will grow fine on sterile substrates.  None however do well when green or other molds take over the substrate first.

So basically all molds will die by 150 degrees leaving us with that tasty thermophillic bacteria
