Yes sir, that is a excellent way to prepare them. Depending on the fungus I was using; I would lightly rinse them in water, dredge them in flour shaking the excess off and then egg coat them. This would help attach the egg coating and the panko or crumbs more evenly.

My favorite would be dried B. Edulus crumbled into dust and mixed with a coarse grain sea salt.Its a great finishing salt for steaks and the like. Morchella and truffles work well this way too.
