Hi all,
I'm relatively new to mushroom farming and I'm trying to understand more on the Hawaiian market. May I know how many commercial mushroom farmers out there in Hawaii that you guys are aware of and more details on them (production, types of mushrooms .etc) Would appreciate if could share some information on this.
Thanks.

From what I've seen online, it seems like there aren't many small specialty farms. I'm sure if there are bigger farms, they only grow one or two types so you could capitalize on a specialty product.
Look for a niche and exploit it.
I hear sugarcane bagasse is a great oyster substrate.
Good luck!

i recall a video on youtube, maybe from a local news channel, that showed a dude growing oysters on sugarcane bagasse. he seemed to have a pretty big operation, at least a few thousand pounds of substrate daily, and seemed like he was pretty new to mush farming.

You might want to call John Holliday and talk to him. His operation was originally based in Hawaii. His phone number is 775-886-6300.

Thanks. The only one I could find online is the Hamakua, and I've heard about Makawao mushrooms before but apparently it has been closed down a few years back.
I'm living in Asia so I'm not too familiar with the Hawaiian market. In general, are the mushrooms sold in Costco, Foodland etc are they being imported or Hamakua supplies to the whole Hawaiian market?

Once again, do your own market research if you are this serious about this venture.

+1 on that! Go to your local Organic/Health food store and ask. Visit 3-5 star restaurants between 10 and 11 or 2 and 3 and talk to the chef. Go to the grocery stores and talk to the produce manager.
- What kind do you use/sell
- How much do you pay
- How much do you buy per week
- Would you be willing to give me a chance if I can supply your needs consistently

[/LIST] NETWORK!
sitting on 40lbs of mushrooms with no market this morning, i called someone I cooked with 5 years ago. 10 minutes later I had the number for a buyer at one restaurant, don't be afraid to call people. or putting yourself out there. but I found, the mushrooms sell themselves if you have a product no one has seen before.

Most mushrooms in grocery stores here aren't locally grown, and the only Hamakua brand mushrooms I've seen are more specialty mushrooms. An "ali'i" (king oyster?) And "pioppini" (black poplar). I haven't seen any Hamakua brand button mushrooms in stores. Locally grown things are fairly popular here, though, so starting a business here could work well.

As I've mentioned, I am not based in Hawaii and to be specific I'm in Asia. So proximity and going around in Hawaii to check out the prices/speaking to people around there or at market is definitely not an option for me. For now, I'm pretty much limited to my own desktop research, which is why I'm here and if you do not wish to contribute I'm perfectly fine
To those who replied, thanks a lot and do appreciate it. I'm doing some research on the industry in Hawaii and therefore just want to get some feel on the ground level there.
I've seen Hamakua & Small Kine Farm as the local farmers there, and like what you have mentioned those guys are specialty mushrooms. I wonder what's the demand for button mushroom or shiitake mushroom in Hawaii? Are the prices for imported mushroom much higher compared to the states?

Are you looking to export mushrooms to Hawaii? if you are looking at having any kind of business somewhere else you really should at least visit. At the very least it is nice vacation.
I know California agaricus and gourmet mushroom farms export to Hawaii were they are sold at about the same price as on the mainland.
Also consider that home mushroom cultivation is taking off in popularity in the US, so the number of small mushroom farms is starting to boom.

Do you stay in Hawaii? If so, what island? I see various mushrooms in chinatown and farmers markets from time to time. Perhaps you can ask them some information, or maybe even make a business partner for selling them if you grow them. Also, Leeward Community College has a farmers market on Sundays now too. I haven't been yet, but I need to check it out sometime.
