Starter in your pic, why are the colonized jars completely full? And should my jars have the much water in them too?

Aerzun, the jars are not totally full, it only appears they are. There is in fact a 20mm gap at the bottom (as the whole lot slid to the lid when it was Co2 drain-inverted) and there's another gap at the top, as the jars are shouldered, it didn't press in flat to the lid. In short, there's enough space to do the grain shake to speed up the colonisation.

In addition, there is a degree of "swell" in the final stages of colonisation, vigorous mycelium puffs up...but by then it's colonised so there's no need to shake. Here's a pic of a jar opened. Note, it's more advanced in growth than the prior pic of millet jars shown. You want it totally white. You'll also note it tends to creep up the jar walls, giving the illusion (at least in a pic) that the jar is as full as a bull's arse.



Now to water content...

I wouldn't suggest you use the ratio of 350ml millet, 250ml water & 1/4 teaspoon of gypsum as I do, as it would most likely be too wet your way. I get very dry seed. Now I did suggest you drop the water content by 50ml and see how you go.

Finally, when I say 350ml millet, that's 250 grams of millet (is so for me). You too can compare ml volume of seed to gram weight of seed, grab a set of scales and a measuring cup. It's a good idea to do that so you know exactly what quantities (weights) you're using with ease of simple volume cups.
