Bulk cakes fruiting in or out of containers?

Lately I've been having lots of success colonizing smaller tupperware containers instead of monotubs. BTW, I'm using coir/verm/gypsum.
I've then been taking the fully colonized 'cakes' and birthing them into tubs, and also into a martha style greenhouse.
My question is mainly for the GH, but I suppose it applies to the tub set up as well.
Does having all sides of the cake exposed for fruiting have any pros or cons? It seems like it would be more likely to dry out, resulting in smaller fruits?
But on the other hand, having more surface area exposed seems like a great idea....more area, more fruit? Is that bullshit?
The other real con that I see to this method is if I decide to use a casing layer, (I've got some PE colonizing right now, and I've been looking into Frank's PE casing layer tek). Seems like you pretty much need the container to facilitate the casing layer.
Just looking for some advice or experience from anybody who has gone this route before. Thanks.

Mushrooms are 90% water. That basically means if you have all 6 sides available to grow on, it will simply dehydrate faster. If more fruits were produced by growing on all 6 sides, monotubs wouldn't be the go to tek for how to grow bulk

I thought exactly like you so after my first flush I unwrapped the plastic sheet wrap that I had my trays in. I'm having mixed results. Of the 5 trays I did this to; 2 are doing amazing. There's literally hundreds of fruits on a shoe box size block. Of the other 3, one is randomly producing some monsters here n there and the other 2 have hundreds of knots that don't seem to want to form into pins. I could be wrong on them stalling but these trays were done at the same time and the two doing well have 2-3" nice uniform fruits. It's been about 4 days and the knots aren't developing more. FYI I spawned wbs to coir/verm
