I would have added more honey, but factored in the sweetness from the apple juice. And I boiled 75 raisins with the wort for a yeast nutrient

it's probably going to be a while, but i hope you report back on how it tastes. i've got all the supplies to make some mead, but im not sure what im using as nutrient. I might just use honey yeast and water. Donno yet

I would recommend the raisins if you want to keep it simple. It will still work with honey water and yeast, but if the yeast has a little nutrient it helps to get things started a little quicker. That way any foreign bacteria/mold that may have slipped in does not have a time to establish themselves before the environment becomes too toxic for them from the alcohol that the yeast is producing.
It is recommended to use about 25 raisins per gallon, but you could probably just eye it

Beer doesn't even have to have hops at all to be beer. The difference is the sugar source, with beer it's a malted grain and with mead it's honey. If it's got both malt and honey, you could probably name it based on which there was more of.
