Sautéed in butter with no spices and ate plain to test flavor. Little salty(butter maybe),sweet after taste. Blackening butter not a visual turn on but overall very good. IMO.

I recommend younger, before they open and start to produce spore mass.

They are so under-rated by most.
Dellicate, exquisite, subtle. And so prolific. I'm waiting for mine to start popping up in back garden. I fed them 3 bags of forest compost mix so they should be pretty happy.

Cool, thx for the advice jet. I agree canid. All in all I found them very yummy. Didn't expect the salty OR the sweet aftertaste. Think I might grow these. Thought they might be more like bisporus but wasn't at all.

Nice, glad you liked them! But those are WAY past their prime! In the future eat only completely white specimens, when the gills start turning pink, the taste deteriorates rapidly.

way past their prime is relative with this mushroom. In point of fact, they're about 2 hours past their prime.

Nah, it's still ok for eating. Younger is better, but if no smell or flavor put zippy off then that's not bad.

You just don't want them after the texture or flavor start to go, if if they start producing a fumelike armoma which makes you queasy.
