Tub stalled ~65%, water drops on substrate, possible cobweb

Whats up guys. You've been helpful in the past so I'm hoping you can do it again. Here is the story:
Using Damion's coir tek in a 24 qt container using 2.5 quarts water, ~.5 brick coir, 1 qt verm, 2 quarts spawn. Had the holes taped up and put inside a trash bag during colonization. After 10 days I took a peek and it wasn't ready so I put back into trash bag for another 4 days. After the 4 days I looked again and no noticeable growth so I took it out for a better look.
Upon closer inspection it seemed like there was way too much humidity, big drops of water on the lid, lots of moisture on the sides, and tiny water droplets on top of the substrate. I took the tape off the holes, added polyfill, and started the fruiting process by introducing light and fanning.
Do you guys think this was the correct approach or should I do something differently? Was thinking about dabbing some of the drops with paper towel, putting it back in the trash bag, and hope it continues to colonize. There are small patches of a light greyish fuzz in places but I should be able to take care of that right? It is still smelling good so I'm hoping this can be saved. Its been less than 24 hours since I started the fruiting process. Pics are from 10 minutes ago, a lot of moisture has left but some still remains. Apologies for the quality.

Do you have glistening droplets or pooling water? Condensations on the sides and lid are caused by fluctuating temps not too much moisture. I would be more concerned with no condensation.
No matter whos recipe you use, really ought to figure out what field capacity is and not adhere to a measured amount of water due to inconsistencies in coco coir & verm
I can't tell from the pics if you have grandmas hair or not, but it takes a few days after birthing to see knots and pins sometimes. I use clear tubs & wait till I see at least 1 pin before I birth.
When you say that you peeked early, did you mean that you opened the trash bag or do you mean you opened the tub?

Its glistening droplets although there are a couple very small pools of water on the sides. At day 10 I quickly opened the bag up looked at it and quickly closed the bag, never opened the lid till yesterday (day 14).
When I put the substrate into the tub I was actually afraid it might have been too dry but I'm definitely not worried about that now :P
The cobwebs could just be my paranoia, its nothing real discernible even with the lid off looking directly at it. I'll wait for something more obvious before I take any action.
Should I continue the fruiting or go back to colonizing? Have a fan oscillating around it currently.
