WA State - Amanita muscaria

Habitat: Found them in a ditch near some trees on the coast in WA State.
Gills: White gills
Stem: White, 1 inch diameter, solid
Cap: Red and beautiful with white speckled bumps
Spore print color: In progress
Bruising: Didn't notice any yet

Sweet, thought so.

When is the best time to pick them? I picked the two large ones, but the other three are still pretty small... Are they better young or mature?

Probably sometime before they are fully open and after they are in the state you see them in now. When they are fully open they will, be or start to be eaten by maggots.

Can I do a stem butt transfer with these? I'd love to have some growing around my house...

Depends on the kind of trees you have in your yard. Would not hurt to try.
You can also take the older caps that are full of spores, mix them with water and dump that water all over your yard.
btw, Amanita muscaria is the only red Amanita on the west coast, so it is pretty easy to ID in the west.

I will definitely be giving this a try. I think these are so beautiful!
I live in the same area that I found them in, similar trees. Many firs, pines, a few cedars and some madrona.
I've been doing all my butt transfers in cardboard, do you think that would work? Or would you suggest a different substrate?
