Turning a shed into a mushroom operation

I have been growing mushrooms in Alabama inside for a while now. I would like to increase my production. I have a 150 sq ft shed outside and I would like to turn it into a fruiting chamber. This is what I want to do, so any suggestions or comments would be helpful.
Get a window unit to keep the temperature low during the summer time. I was unable to get a same day replacement warranty on the window unit that did both heating and air (has to be less than $300), so I just went with the AC one because I like the same day replacement warranty, because I heard window units don't last very long with spores everywhere. It has a fan and filter to blow some fresh air in.
I have an old ceiling fan that can disperse the new air around the building.
I was going to get a portable heater that could be placed inside just incase it gets to cold outside. I am not sure if the humidity or spores would mess it up yet. Will have a warranty just incase.
I plan on putting up 1/2 inch insulation stuff that I found at home depot and lowes and the covering it with plastic around the walls because I don't want the humidifier/humidity to tear up the walls in the shed. I would probably put up the insulation, then use pvc pipe to hold up the plastic... Not sure yet though.
Also I saw in another thread where someone had buckets that they just stacked. I could get a lot of those for cheap, and that way I wouldn't have to build shelves.
I have read the other threads, but I just wanted to see if anyone had anything that they could add or tell me what I am doing. If I am going to do something like this, I want to make sure I am doing it right. Also just out of curiosity what if I put some plants in there to keep some clean oxygen. That way I wouldn't have to use the window unit fan so much.

The output of oxygen by plants is so miniscule that it wouldnt change anything and seems like an outlet for pests. Will the entire shed be a fruiting chamber and you do the work in the house or will the entire op take place in the shed? Also, what type of shed are we talking here? Dirt or wood floors? Sheetrock or uncovered studs?

The entire shed will be used as a fruiting chamber. The shed is brick on the outside with plywood as the walls on the inside (not the top though. It has just the support beams) When growing inside I never really worried about fae but I am not sure if I should worry about it with the shed.
