Lactarius deliciousus? How should i cook?

I believe this to be an edible lactarius.
Found under coastal pines latex from cut stem is orange



Ive never had these before so I would like some advice on the best way to cook them, I know ive read Ganzig explain it a few times but i cant track down those posts.. So anybody who eats this species whats your favorite way to cook it?

In that group anyway. I've had them the once. They stayed quite firm fried in not too much oil. Kinda gave me an orgasm, the best tasting mushroom I've eaten. Bon appetit!

1.) Select youngest and firmest specimens.
2.) Taste them for excess bitterness.
3.) Slice them thin and saute them long and carefully in olive oil.
4.)Add garlic and remove from heat.
5.) Add a little salt when finished.
6.) Taste them this way and see if you like them alright.
7.) Try something more creative. Consider tacos.

I tried it the way Canid explained. At one point they were foaming the whole pan with orange latex. I used canola oil since i didnt have olive oil.
Texture is nice. I need to work on my recipe a bit for flavor. Do you guys fry them till they start to turn crispy or just till cooked?

You can get the heat up at first to drive moisture off if they're saturated. If they've begun to dry (before collection, or as when they've been sitting indoors overnight, or sliced in the fridge for a couple of days) then they aren't overly wet.
I cook them till crisp. The texture is better by many people's standards with longer cooking, but if not cooking them in water based liquids, the flavor improves. If you cooked them long in a wet sauce, you'd probably lose a lot of the flavor into it before they were properly done.
It's often a good idea to cook any edible mushroom you haven't tried before particularly well, to avoid extranaeous indigestion in the event they don't agree with you.

I like to saute them in butter with a bit of olive oil, a crack of pepper, pinch of nutmeg and a splash of mirin, simmer till the sauce gets thick and syrupy and the mushrooms have a slight crust to them.
I'm surprised more people don't appreciate lactarius, I guess its hard to find them in quantity and quality at the same time. But when you do...

Sounds epic RZJ.
I make mine crispy. They taste funny if they are under cooked. But otherwise I absolutely love them. The ones I liked the most were some monsters I found at the coast.

About 4.5" across and not a single bug. I am not sure what species they are.
I find and eat L. rubrilacteus a lot. They are really darn good.

Rinse the Lactarius deliciosus sensu auct. amer. thoroughly. Pat dry and slice very thin. In a lightly oiled saute pan place a piece of ginger to flavor oil and cook over high heat to release the flavor. Place the thinly sliced Lactarius deliciosus sensu auct. amer. into the pan and toss over high heat until lightly browned and caramelized (about 5 minutes).
