Enoki Myc. A question on its appearance.

I have grown cubes primarily in the past, and due to simple reasons I have given up and am moving on to fruits that are filling, lacking in ego loss and OOBE.
I have been cultivating an Enoki strain, and had a very general question about the appearance of the mycelium. I have what I think are 3 fully colonized quarts. Just as a comparison to cube myc, Should enoki look "dirty". It is almost ugly to look at. I am skeptical of it, but I find it hard to believe that I managed to crap up these 3 jars. Anyone with enoki experience that can confirm these adjectives?
Also, I used the search function, but found very little info on bulk spawning. I am reading and understanding that this type of mushroom is "more desirable" to be tall and skinny and white from high co2 levels and less than adequate lighting. I will probably be spawning to a hardwood sawdust bulk tub.
Does this type of mushroom do well with G2g transfers? Shaking at 20%+ seems to have been effective making one jar finish a few days before the others.

yes, crappy could be an adjective for it on agar. sort of like shiitake, it can get brown spots but smaller than shiitake ime. it's certainly not as ropy as cube myc, nor brilliant white.

Pictures? Fuzzy, aerial, white specs/spots with age, invitro pinning, quick growth, are some adjectives i would use.

Thank you so much for the very clear description. This is EXACTLY every adjective I could imagine. Boy howdy is it fast too. 10-4 I inoculated a quart, and last night I did a G2G. It was more than ready for it also. I may simply mini-mono them for the excitement, irrelevant of producing the more cherished tall/thin look. The natural look as well is impressive.

My grain jars looked like they had been taken over by yeast. It is definitely a funny looking myc as it gets older.
