Ok, so I got the flame shield up as I post this so feel free to fire away. Photos will be coming soon.
So the concepts behind this fall under aquaria, aeroponics, and full aquatic species of plants. In addition some traditional teks from this site were used.
The greenhouse is kept in a "cold" room, the temp in this room does not rise above 65 and does not drop below 60. The room is small, about 60sq ft with a couple of outlets in the ceiling, an air vent, wash sink and shop light. I did not build this room with this intention. It used to be used as a chilled pantry and before that a darkroom.
The purpose behind the chilly environment is almost along the lines of a reverse theory of pasteurization. Leave the mycelium just warm enough to produce fruits and any bacteria or competing mold spores from being able to take hold as certain bacteria's either become dormant or slow down to the point of becoming a non-factor.
Why the specific temp ranges? I looked at cold grow parameters from this site, what the lowest temp that was documented as being successful. The additional portion comes from aquarium keeping, certain fungal infections and bacteria that occur in standing water are killed off at temps over 86 degrees and at temps below 68 degrees(again others will just go dormant or slow to the point of non-detection on living species). So while we are working with a different organic species all together the antibiotics used in antibiotic agar recipes are also found in every fungal and bacterial treatment for fresh and saltwater fish. While I didn't use any antibiotics in my agar or jars I know how to treat these infections in living creatures using other methods why not mushrooms?
So almost all the prep, including the liner stays the same. Same grain prep, same inoculation steps, same sub steps including pasteurization. We still want to mitigate any competing spore or bacteria - think of cold growing as a possible additional measure. I did add a casing layer of verm for moisture. Uncased the substrate became stressed and dry.
What about humidity problems that normally plague greenhouses? Simple! When dialed-in like a monotub the humidity produces itself. I only sprayed 2 days out of the 3 weeks it has been up - harvest size is on par with my mono-tubs. The greenhouse has 3 shelfs filled with coir bricks and the bottom shelf with a tub of perlite. The heat put off from the light(positioned inches above the GH), the coir bricks and the cold temps outside make for a wet, foggy, GH.
What about poor FAE in the GH? This we can actually use to our advantage to encourage the stumps to grow over themselves and form new clusters over old. For FAE I use 2 fans about 4" in diameter maybe 5" pointed away at the bottom of the greenhouse. The zippers are open about 3" from the bottom. This is just enough for the tie portion to move and door to billow slightly. I only open the door to harvest or swap out bricks. Over the 3 weeks I got around 7 1/2oz from bricks in various stages (some were put in on their 3rd flush and lasted till around 5th, 2 small shoebox size bricks both on first flush). I'll do additional tracking as most of what I put in was to fill the area to keep humidity.
Items used: Indoor Mini GH Shop light 6500k bulbs lid from giant iKea tote Pressurized hand sprayer Mister bottle (used to add moisture to the verm after put into fruiting or after harvest)

Well I know for a fact I did an autumn grow with temperatures around 56-60 mid day. these were monotubs with a lot of thermal mass/lac of heat exchange (monotubs retain their moisture and thus most of their heat) and I think that that makes a huge difference. If you put a greenhouse up in the area I did that grow in and grow smaller substrates, who knows. However 60-65 should be fine anyway. Your theory is solid, bacterias form at higher temperature than fungus and at lower temperatures fungus can dominate more readily. YOu might consider the mass of your substrate and how thermal mass fits in to it as this is the biggest concern during incubation and inoculation of substrate.
Have you considered putting the perlite on the top, as moisture is heavier than air it should wick down.
That said I have never kept a successful greenhouse, though it was with mush of a much higher fae requirement.

I never finished documenting this before my hiatus. Terrible terrible idea. I had 6 bricks made in 30qt tubs inside there. Harvested a few rolling flushes and went to sleep one night. Woke up to the worst/fastest cobweb ive ever seen...
