It doesnt need to be balled up to rise it would actually rise faster flat because the yeast has more access to oxygen.
This!!!!
If you're actually worried about it getting all bubbly you punch holes in the dough with a fork or something to make holes for air to escape while in the oven.

A true pizza dough sits overnight and is kneaded until you get a window pane when stretching it out.
Tear a chunck ball it up and stretch it out. If it stretches and you can see through it before it tears, Youre good to go.

Bumping this so I don't have to make my own thread, just tried out my own version of the Op's video
Gonna let that dough sit for 4 hours, then it's pizza time!

You can go longer then 4 hours set time for the dough. Ideal is 6-8 hours or so. I would make the dough before I left the house for work. Come home and make pizza for dinner at 4 am ish.
Pro-tip after the dough is done rising season that shit. At the very least a little salt and pepper.
Other good spice are basil oregon garlic powder ( I like fresh garlic on the pizza its self)
Rosemary is awesome on pizza but you got to do it right. (very little and right toppings.)
Also pre cooking the mushrooms or roasting a red pepper beforehand makes the pizza .

I know you've got your answer and the pizza is probably already gone but...
when I make pizza I like to add some garlic and spices to the bread dough let it rise flour the pan to prevent sticking flatten the dough into shape with a soup can or a rolling pin if you think you're better then me and let it rise again this creates a thicker crust that doesn't get as soggy from the sauce

certain spices (salt) will kill the yeast you can season it at anytime just be aware that it may affect the way the dough behaves

yeah i also learned that too much water makes it all goopy, and stick to everything
i had no idea salt killed yeast, good think i only used a pinch, and didn't mix it directly with the yeast.

425 till and let the oven heat up nice and warm
Depends on pizza thickness amount of toppings check it at 8 minutes more like 12-15 till its done.
The crust will be fucking golden and cheese will be a little brunt

A pizza should be cooked at the hottest temp your oven will do on like a pizza stone or some foil wrapped bricks that have preheated for like an hour. A good pizza is cooked around 700+ degrees F. Specialized pizza ovens (many people build their own) go over 1,000 degrees. Hence, the hottest temp your oven will do. There's a pizza forum out there that's to pizza what Shroomery is to shrooms.
