Please help me with my pinset!

Hey fellow shroomerites! I've been growing for about 18 months now and decided to try straw after a six month hiatus. At first, I tried straw logs, but I simply don't have the room for that anymore, and it's a pain in the ass to find suitable bags to make logs from. So I then had the idea to stuff gallon bags with straw to make "Straw cakes". This has worked well, I had no problem with colonization, and even had some pinning inside the bag. I was excited because there was tons of knotting inside the bag.
It had been about 5 weeks and they were fully colonized with about a week of consolidation and I "birthed" them. I pulled them out of the bag and put them into fruiting conditions. All of the invitro pins have developed into beautiful fruits, but I've had no pinning whatsoever from any of the knotting which occurred in the bag. Do any of you have any suggestions how I can get more out of these? I know it's a little bit of a crapshoot as I used MS, but at the same time, I've never had these poor results with MS.

Can you make a loose tent from the bags? I probably would have just slit the bags open.
What are you fruiting in?

I have a pmp type setup with geolite and an aquarium pumping air into the rocks for humidity and fae. I keep my stuff elevated off the floor with some wire shelves. I could have left the plastic on, and I know that microhumidity climates help create pins, but I had figured the knotting would have led to pins without the plastic.

Do you ever fan out your tub? I don't know if I'm really convinced that an aquarium pump will give you sufficient FAE.
Are the blocks still moist enough?

I've been using this type of setup since I started (except for a brief sojourn into Martha territory), and have had great results. I know the size of aquarium pump I need to replace the air in my terrarium often enough. The cakes are moist, and not dried out. I'm at a total loss here. What has worked in the past is simply not working now that I'm growing on a different medium. Maybe the key is indeed the plastic
