the chef said that the chicken really needs to take care of the ball, not turn it over, and to do a better job when he gets into the red zone

I've seen this before, and it is true. A mass market chicken tastes like nothing compared to small farm raised birds. Same with eggs.

The figure you see is seconds. You can either convert the desired start time (which of course is minutes:seconds) to seconds or just guess and repeatedly preview the post until you get it right.

i actually saw a video, when blindfolded, and cooked by a good chef, most people couldnt tell the difference with eggs, most of the clues if the egg was farm raised or mass marketed eggs, are in the texture of the egg over all, and color of the yolk

The video you mention is not definitive. I used to eat a lot of eggs. I used to buy eggs that I thought were decent and then I started buying the most expensive eggs in the store. The first time I tasted them, I immediately noticed a strong, amicable taste that I had never experienced when eating the less expensive eggs.
Such a test is much more effectively performed using raw eggs. Is that what the participants were eating? That's what I was eating.
