They obviously don't get heavier after you pick them, but they do continue to open up more.
When you go to a fungus fair, watch the Amanita eggs on the first day and on the last day, big difference.

Do you think the amanitas are more prone to this than other shrooms? This is the first time I've noticed this and I often leave shrooms lying about if I'm not quite motivated enought to do something with them right away.

Yes, with other mushrooms the cap opens up a bit more and the gills turn closer to the spore color, but they the stem does not get longer as it does in Amanita. Amanitas develop much differently than all other genera.
