Fruiting difficulties

Hi all,
I think there might be something off with my cakes during their fruiting stage. Initially I took two cakes out of their jars (not allowing time for consolidation) and a week and a half later there were no pins and the cakes looked very dry. As a result, I dunked them again, this time not casing them in vermiculite to see the difference. It has been about a week and a half since I placed them back in the SGFC and lots of pins have started to show up (one actually showed up while it was being dunked), but their growth (to me, the first-timer) looks atypical.

As you can see, one of the cakes has a pin on it that developed extremely fast and has already got gills. It's short and has fuzzy feet around it (presumably lacking FAE?). The other pins on the cake are small and have remained small for the entire week that they've been here and have a wet coating on them that you can run your finger over to wipe off. I have read this may be a moisture content issue.
The other cake is doing better I think -- it has a nice pinset that is growing out from underneath the cake. Again, quite a few small pins that don't appear to be growing.
To give you an idea of the conditions the cakes are in:
Shitty electronic hygrometer reading at 98% RH Temps varying from 73-80 Fanning four times a day Misting twice a day
What gives, guys?

My only concern with misting more is this quote:
"I write improper because too much and too little water can dwarf our fruits. However, if we have too much water in the substrate, the mushrooms should look excessively glossy/slimy on the caps."
I definitely have excessively slimy caps.

You used the wrong size jars, so gravity is pulling all the moisture down to the bottom of the cakes.
Hence all the bottom pinning.
You should only need to fan after misting, as we do not fan for FAE.
Is your chamber built properly? 1/4" holes every 2" in a grid pattern on all 6 sides?
Is it raised so air can pass up thru the holes in the bottom and up thru the perlite?
Are you misting the cakes directly, or just misting the chamber walls and perlite?

You don't need to mist that much when you do mist. Just mist until the cakes glisten. When that surface moisture is gone, mist again. Fanning doesn't take very long either.
Hacker, I didn't know that about the taller cakes. That's a good point

The jars are definitely tall but I've seen them used in a few guides. You make a good point, though.
The chamber is raised. There are 1/4 inch holes on all six sides spaced erratically (my drill wasn't fun to use with the plastic bin) but there are enough of them to allow proper airflow. I am misting over and directly into the chamber and also misting the sides from outside to *try to* wet the perlite.

No PF Tek worth reading suggests using tall jars.

It would also be a good idea to stay consistent with what you do so that it's easy to adjust and trouble shoot what's going on. If you aren't consistent then it's hard to know what the problem is since there are so many more variables to account for.

Alright. I appreciate your insight. I've essentially reused the jars and they're fully colonized at this point. I can imagine it's probably best if I switch to the shorter ones for future attempts. Thank you!
