at what temp does psilocybin start to break down?

To my knowledge, it starts to breakdown just about 200 degrees. I could be wrong. Let some others post and see. Ill do a little research of my own as well.

How come people say do not dehydrate your shroom in a dehydrator if it goes over 100 degrees?

Psilocybin and psilocin are sensitive to oxidation, with psilocin being particularly sensitive. This process is accelerated at higher temperatures. There is no specific temperature at which this breakdown occurs, however, the longer you expose the psiloc(yb)in to a raised temperature (in the presence of oxygen or an oxidizer), the more will be degraded.
To my knowledge, there has been no study or report of anyone quantifying the amount of degradation at various temperatures. Qualitative reports however seem to indicate that less than an hour of boiling or steeping seems to have little to no effect on the potency of psiloc(yb)in water solution.

SO FOR INSTANCE: how much potency would be lost if you used a commercial dehdryator to dry some amount of mushrooms. Would be about 1/2? Meaning you would have to take twice as much? Or more/less? Thanks peace-

I don't think anyone knows the definitive answer to this question, however, let me say this... If you use a heated dehydrator, you'll still have to put your mushrooms in an airtight container with desiccant for a week to finish getting the last trace of moisture out and render them cracker dry. Disabling the heater or just placing them in front of a fan before the final drying with desiccant will take only a little longer and will not risk reducing the potency.
So, why risk it? Use a plain fan or disconnect the heating element.
I fan-dry for 24 hours, then they go into a Tupperware container with DampRid ($2 at Home Depot) for a week, then vacuum pack with a little DampRid wrapped in a paper towel. After two years in the freezer, their potency is indistinguishable from freshly harvested mushrooms.
But what do I know...

I agree..most people just use a dehydrator and thats it, but I found that the mushies tended to absorb moisture in the air after they were stowed away properly. I just place some dessicant in the bottom of the storing chamber and it solved that problem very nicely, and keeps them cracker dry.
