Chicken-fried puffball steak is a nice way of preparing these things.

Use some of the larger slices as pizza crust and put pizza topping, some suasc a bunch of those puff balls sautead and but them on there too some cheese. Then bake it in the oven a spell. That will be a real mushroom pizza

I used to make little holes in puffballs (or puffball pieces, for the larger species) with a straw, insert a cut piece of spring union through the hole and then tempura fry them.

You should eat them or layer them with paper towels in a large bowl, cover with tin foil with holes so they can breath and save for later. They should stay good that way for a few days.

*oops; spring onion. stoopit fingers.

I do it so there's a nice little bit of mild onion in each bite, and because it makes them look pretty, but it works out well.

If you're into pasta making, puffballs also make great ravioli stuffing:

sauté some shallots and garlic in butter, add puffballs, keep sautéing on high heat until they turn brown, add chicken stock, a little white wine, oregano, parsley, thyme, paprika, pepper and a little salt, simmer on low heat for half an hour, mix in cuisinart, add some Italian breadcrumbs if the texture is too liquid, use as ravioli stuffing and use whatever is left for a cream sauce to serve them with.

Something else I do quite frequently with regular puffballs, but it should also work with pieces of giant pb:

Cut in half; beat eggs, a little salt and liberal amounts of grated parmesan cheese, put puffball in egg/cheese mix one at a time, then in breadcrumbs, put on baking tray, bake @400°F/200°C for 20-30 mins, serve with cocktail or sweet chilli dipping sauce. Makes a great finger food/appetizer and should also work with giant puffballs.

Wow! Great info!!! Ty so very much for all of that. The second recipe sounds like I could domit. The first I may need to practice a time or two to get right. Since I find these things so often I best start saving them or learn to cook them to best utilize their flavor like you do

I may try drying some of them again for later rehydration in soups or stir fry. I just cut them in small chunks then air dry them laying on a screen for a day then into the oven on its lowest setting (170) with the door cracked for a couple to a few hrs. Until they are crisp like a cracker. Then I could jar them and add a desicant pack  I love this site for all I have learned/learning.

Last time I found a big puffball I dipped them in egg and battered them.  Then pan-fry.  It was pretty tasty.
