PRESSURE COOKER / PRESSURE QUESTION !

Hello everyone,
I recently upgraded from using an ugly metal pot to buying a brand new pressure cooker.
I couldn't get any information on the pression on their site (I bought a famous classic french model from Seb).
Anyway, the point is, i only discovered the maximum pressure on the little book sold with it and it says : maximum pressure while functionning : 55 kPa (8Psi) // maximum pressure (on the security thing) : 110 kPa (15)
So this looks to me like my pressure cooker can only hold half the pressure than what's recommended (15 PSI = 103 kPa)
And the security thing 110 seems to be the limit that will trigger the PC to use the security system so it doesn't blow up in my kitchen.
MY QUESTION :
If my PC only goes up to 8 psi, can I still use it to sterelize ? Do I basically have to double the time ? Is the temperature lower in it ? :O Is this going to work ? :O WHY IN THE HELL IS MY PC ONLY GOING UP TO 8 PSI :O Are we all going to be ok ?

you can use this and yes you will have to cook longer, the question is how much longer. I do not know but im sure someone will chime in with numbers.

I hope so ! It wasn't even a cheap pressure cooker !
So yeah for everyone arriving :
If your pressure cooker has less pressure (7,5 PSI for example) do you just multiply the time per two that it would take on a 15 PSI pressure cooker or am I totally screwed ?

Of course it goes higher than 8 psi. The more heat the higher the pressure. Just get it singing but be careful. Use your judgement. Problem is you won't know what the pressure is for sure most weighted pcs go up to 15 psi when the weight starts to wobble.

I used a similar model for years. And yes, you'll have to trial/error until you get the ideal steril. time.
I ran mine -10 liters each - 2,5h/3h on med-low heat. I adjusted heat until hearing a subtle "singing" and making sure it will be that way during the whole cycle.
Besides figuring time, you have to be careful about water. Since it'll be cooking for long, make sure you have sufficient water to keep the whole cycle.
I always tried to get it max capacity filled with bags/jars and very little water content.
For that, in the beginning, some bags burnt. It would smell like burnt grain and shut whole thing down and clean and tried again. Try a few grain jars first.
