Explain what the base looks like almost apears to have a volva.
Maybe a Stropharia of some sort.

It looks like the broken stipe of a second mushroom, but I can't be sure.

almost a little sting of spice to it when I chewed and spit it out.
That is indeed a stem of another one.

Russula cremoricolor seems like a possibility, though I'm finding conflicting descriptions between 'peppery but not acrid' and 'strongly and immediately acrid'.

It also comes in red and pale creamy cap, and I'm not sure why it isn't two or more species.

It might. I think that species was originally described from CT.

That looks a lot like a Lactarus of some sort now that I get a good look at it gills are totaly off for Russula and if you look real close it appears to be posibly some droplets of milk at about 11 12 oclock.

The gills look ever so close and narrow and brown for a Russula even if the attachment is right. I think Lactarius is possible. It is too dry for milk.

The mushroom look a bit dehyrated though. Sometimes there is no latex when there a a bit dry. Got a microscope? if so have a look at the spores

With the crazy intertwining of Russula and Lactarius, there are few times the Lactarius isn't a possibility unless the mushroom has already been idetified
