Right on! Thanks.
Today was my first mushroom hunting outing and this appears to be the only one worth eating.
Thanks for being here and for this lifesaving web forum.

White chanterelle, Cantharellus subalbidus. I like them even more than the Pacific golden chanterelle.

Really? I find that they lack in flavor and scent compared to the C. formosis.
They are still great but just not as much flavor.
This is a comparison from hundreds of chants.

No problem. Cool find for a first hunt! I love that excitement. I remember my first chant still. So fun.

I honestly don't notice much of a difference in taste between the species, but the whites are usually much larger. They always seem to be most abundant early in the season and get rarer as the season wears on: This season, I went on my first Chanterelle hunt in early September and bagged maybe half the yield in whites. These days, I find maybe 3 or 4 of them in a yield of 7 to 10 lbs.

I like them more not because of the flavor. I too find that they taste the same. As MycoMen said, they are larger. Something just feels great about using one giant mushroom for breakfast.
I find them infinitely more difficult to clean than the Pacific golden though. Something about the way they grow and the fact that they are white, it always seems like there's more dirt and needles.

QFT. Seriously. I have sold many this season to various restaurants in my area and I hated processing the whites. Goldens are so much easier to clean.
At home I clean them but not as well and just eat some dirt and needles. Fer yer health.

With the whites, I don't really bother cleaning them the usual way: cut them up, remove the worst debris in the way, put them in a bowl, fill with water, agitate manually, scoop out into a strainer, replace the water and repeat twice (gets rid of all the heavier-than-water dirt), then just throw them in a frying pan and evaporate the liquid. Most needles will come up with the foam thus created and can be removed easily during the process. When evaporated, process however you'd like or put the excess in freezer bags and freeze.

Considering I had an unexpected find of goldens this morning, here's a demonstration:
 This morning's yield
Cut up and cleaned the worst debris
Washed 3 times and transferred to frying pan
Foaming up on high heat (note organic debris on bottom left)
 Ladled-off foam with organic debris
The foam collapses after a few minutes
 The finished product

You boil off the impurities as processing?
I just cleaned, sliced and dried them. Should I reconstitute, boil and skim?

No impurities to boil off in chants. Just nice to get rid of all the moisture.
No need to boil them.

It is important to cook Chantrelles, as they contain amitoxins, not unlike Galerlina, but in smaller amount.

Well, Ill shut my mouth then. And stop eating them raw. Sorry about the misinformation there.
And I am not eating chants raw.
But you still do not need to boil them. Just cook them as jet suggested.
That will be enough.
I did not know that about chants.... Everyday.

So I need to cook them to process them for sale, then?
The same patch had blue chanterelles, but I lacked the experience to know. Instinct tells me to shy away from blue food - thanks to George Carlin.
Now I want to go back and get those, too!

No they sold fresh or dried, but people who buy mushrooms would more than likely know they need to be cooked.

No, I just throw them in a frying pan and turn on the heat. No need to add water, they'll produce plenty during the process. Evaporating excess moisture makes freezing them without air pockets in the bags a lot easier and has the added benefit of getting rid of the lighter-than-water debris that still sticks to them. Also, it reduces volume and weight while conserving all the taste, making storage more efficient.
I've never dried chants, my information is that they are pretty chewy even when rehydrated.

I'll do that. I've been searching for Matsutakes, though, and there aren't any growing around the chants.

I found my first matsutake today. They were growing near chants, winter chants, and hedghog. As well as many others.
I know nearly nothing about them.
I know some people really like them.

Where did you find the mastsutake, generally?
I don't know if pickers are still working in Chemult or Mt. Hood. I'm thinking of going over toward the coast because it's closer.

I went back today for the blue/black ones and could not find them. I did, though, find what I started our to find two days ago: My silver tuna, the matsutake! Found two with a combined weight of 9oz, so I'm not that upset about not finding the blues.
Found 4# of white chanterelles, 5# of shingled hedgehogs, and 2# of pigs ears.
I need to post the pic of pigs ears for confirmation, maybe.
