ID Req: white/cream cap with white stem/gills, Really earthy smell - Seattle, Wa

Habitat: Seattle, Wa, Wet Woodland, under soil (see photo) - had to dig up, under living plant cover.
Gills: White, attached, gills.
Stem: 3-4cm long, 2-3cm wide, white, slimy when wet, solid, thick.
Cap: 10-14cm wide, white light yellow, flat to depressed, slimy when wet.
Spore print color: Pending
Bruising: None
Other information: Has a very mushroomy/earthy smell.

I washed one up and it smells yummy, like fresh mushroom.

Russula brivepes would be my guess. Cept the stem is a bit narrow.

Edible but I have not tried it. Can't seem to find one without a ton of maggots. I read that they are not so good. But I read in that same book that the L. deliciousus group was not deserving of their name and they are so wrong about that.

So I cooked these up for breakfast. Bigger one was OK texture and taste, but the smaller one was really good, almost sweet like a earthy radish.

L. deliciosus and L. rubrilacteus are great; it just takes an eye for getting them in just the right condition.
Probably true of Russulas too, but I'll probably never know for sure.

This might suggest that they are maturity/condition critical after all. Make a note of whether this becomes a trend, with the younger specimens being far superior. Particularly if it seems to be true even when the older/larger ones seems to be just as firm and fresh or not.
