**UPDATE** Bulk Substrate Stalled? I'm fearing the worst. Please Help!

I inoculated WBS with creeper. That went great. I then spawned to bulk substrate (Coir, coffee, gypsum).
Everything went fine I thought, but it seemed to have stalled a few weeks ago. I had them in aluminum 13"x10" pans covered with aluminum foil. I was fearing that they couldn't breath, so I moved them into a sterile rack (it enclosed in a sterile room. I cleaned with lysol, alcohol, bleach, etc. in a clean room. I even wear respirator and gloves and body suit). Anyways, there are no contams, but these damn things don't seem to want to fully colonize (unless you say they are from the pic I'll provide). Now I fear that the co2 isn't high enough, but I do enclose the chamber, so it should have roughly the same amount of buildup as if I stuck it into a 66qt monotub at this point. My nosy wife opens it daily though to check even though I tell her not to, so that fans it which is probably bad at this point.
Two days ago, the substrate started separating from the sides of the tins they are in. Is this because they are too dry? I turned on a humidifier (modified a while ago for an old terrarium I had, so it's a tube going into that chamber) to give them some moisture. The room temp is around 75-79 degrees, so I know a bit warm, but I don't know what to do to jump start these things?
Is there any saving them? Should I dunk in water? Should I just let continue? Should I drop the temps and cold shock them (even though I thought that was old wives tale)? Any and all help appreciated, especially from the heavy hitters like RR, TL, etc.

It looks too dry. The myc on top looks thin and weak.
At this point, a dunk could lead to contamination, but you may have nothing to lose anyway. The myc on top may be too weak to recover faster than contamination.
If it were mine:
Dunk it in cold tap water for 3-4 hours. Then put it it in to fruiting conditions.
You may have to treat it kind of like a PF cake. You may have to mist the top till it glistens, fan it a little, then wait till the glisten is gone and repeat the process.
If the glisten never seams to go away, then increase FAE.
Depending on your set up, you may want to be having to fan and mist 4 or so times a day. I would try to make enough FAE that I would have to mist 4 times a day. The FAE of fruiting conditions may help keep contams away.
Unless you know what you are doing, skip the coffee next time because it's contam prone.

it's done for. toss it. not sure if it ever had a chance. it should have been a solid block of white around day 10

That SUCKS. I'll try to baby it and see what I can do with misting and FAE. Funny, but I already have another brick of coir/verm/gypsum pasturized (and cooled by now) to do mono tubs. I should have just done monotubs to begin with.
I'll see what I can do and see if I can make something work.
If not, then Smurff might be right, but I really hope he's wrong (no offense).

Day 1 post "expect nothing, but hope for something"...

Ok, I have a BUNCH in here (like 24 of these) The top rack is closest to the blue light and it seems to be jumpstarted. The others, eh, I'm seeing a bit of change but not much and I THINK I see the beginning of contam on a few (isolated them so they don't spread to others).....
I'm still expecting the worst, but at least a few are looking better.

here is what expect mine to look like.
this is day 7 after inoculating coir/verm/gypsum with 4 quarts of burma.

I would put those in a SGFC keep the room temp at 79 degrees f, spray and fan three times a day, and mist right before you turn the lights on, keep on twelve twelve cycle, you probably have them near a cold wall or floor, try a blanket and lots of misting and fanning, they do not look back, the speration could because the mycelium is eating the newts insides the substrate and growing a stung myc bed.
I sure as hell wouldnt toss em
dont dunk but mist em good then fan then lights the heat and proper gas exchange
TADA.
The only real problem would be a mod which I dont see present

**UPDATE**
Well, I lost some to the inevitable mold. They smelled fine, but the top layer was turning yellow, so better safe than sorry. I tossed some. But I have 6 trays that look strong and are actually pinning.
 That is from yesterday. today, there are a few more pins. Thinks are looking up my friends!
I'll keep this updated, but it looks like what was once dead is now alive! Thank you for all the suggestions in here. I have them on a 12/12 cycle with misting and fanning 3-4 times a day (I have a day job, so I can't mist/fan as often as I'd like). But things are looking good. The room temp is 80 which is kinda warm, but the little heater I have in there doesn't have a thermostat, so it won't auto kick on/off.
I still have some other trays that are turning yellow. Again, they smell fine, but the yellow concerns me. I might throw them out today after work. But the entire row that is closest to the light is pure white and going strong. Again, thank you all. I'll keep this updated!

The yellow is likely just metabolites, not necessarily a bad thing. I wouldn't toss them until you see actual mold.
