Since I assumed this wasn't purely for grammatical purposes, I asked you this to see why you thought different species have different value. I wouldn't feel that bad if I stepped on an ant...I would feel bad if I stepped on a mouse But does that one animal have any logical value over the other?
At some point the distinction is going to be pretty arbitrary for sure. All humans eat living things of one kind or another though. Presumably you believe it's ok to eat plants. That suggests a value judgement that it's justifiable for some living things to die to continue your life, but it doesn't necessarily mean that you place no value on the lives of plants at all though obviously. Many would agree that cutting down a thousand year old tree to make dining room tables or something is morally wrong, but that position does not necessarily make someone a hypocrite for also eating nuts that could have grown into a big majestic tree.
As a human I value human life over the lives of other animals. A tiger would have no moral qualms about killing and eating me, and arguably places a higher value on its own kind than it does on mine (although it's obviously not formulating its thoughts the same way I do.) From my perspective a human's life is worth saving over a tiger's, and from its perspective the reverse is true.

The first part I agree on. Although as far as I know plants don't have central nervous systems nor are they aware. Though some sea creatures do not have one either nor are they apparently self aware...so can I eat them . I value some animals higher than others But the question at hand is if it's not based on cuteness or intelligence what is the logic behind it or is there none. The second part was just the instinct argument...which we can agree are not always I the best interest of others

On another note. I had the chance to look after a dog the other day that was found by police. The owner had died and the dog had been eating him over a week. This was the evening the dog was found. So if I did take it and walked him he would of shit a digested human of which I would have to pick up and bin...is that weird

It doesn't seem weird to me, unless you put a lot of thought into it.
(just to keep on topic) You know what I think would have been weird? If you were to eat the dog because then in a way you would of ate a human

Those are some fucked up details that will probably be omitted from people when they try putting him up for adobtion. No way would I ever want to adopt a dog that ate his owner.

My point with the second paragraph was that valuing human life over other animal life does not necessarily imply a belief that humans are superior in absolute terms. As you say there is an instinctual element to it, but our instinct for co-operation with our own kind has helped our survival. Certainly it's something that's open to be questioned though. Personally, the list of animals I wouldn't eat is definitely somewhat illogical and taboo-based. I don't really like the idea of eating horse meat myself, but there is no logical reason to say that beef is OK to eat and horse isn't. Carnivorous mammals and non-human primates I wouldn't eat because I see their intelligence as being too similar to our own. They're also in shorter supply in general, so killing them without a good reason is also wasteful (like chopping down the very old tree.) There are other reasons as well, such as bioaccumulation of toxins in predators (which also applies to predatory fish) or transfer of disease from animals we are too closely related to.

I would totally eat a puppy. Even if it was only to piss off my friends who have dogs.
I hate dogs
