Messed up Storing mushrooms are they still good?

So I thought I had properly dried my little buggers,(I used a fan for about 72 hours until they were what I thought to be cracker dry) but I took them out of the storage container to find that they weren't, BUT they were very close to cracker dry. They've been sitting in a dark cabinet, in a plastic container for the past 7 days.
MY QUESTIONS: Can I still re-dry with a proper dehydrator and avoid any contamination and will they still be edible without risk of eating a contamination and getting sick? Are any risks involved with having almost dried mushies (probably 70-75% dry) sitting around for a week and then re-drying? And I know you can only get them down to about 10%. Further Info: Some are cracker dry and will break, but others bend proving there to be moisture.

You should be fine as long as they don't look moldy.

you should be fine as long as there is no sign of mold or nasty smell ,but a few questions for you
1.) if you had a dehydrator why didn't you use this in the first place?
2.) do you have moisture absorber(like damp-rid)?
When using a fan( at least based on research) mushrooms only get from 70%-95% dry(based on your setup) and a moisture absorber like damp-rid should be used to finish the job. Just make sure that your mushroom don't touch it!!!.

A problem i had last winter, is that it gets really humid where i live during Oct-Apr, (always 60-80RH) and even when i cracker dry them in a food dehydrator all the way, i put them in normal ziplock sandwich baggies kept inside a grocery bag, and just kept the grocery bag in a sterilite tub.
Come a couple months later to find out all the thick ass stems are all wet again, and real soft and squishy feeling on the inside. So i tear the stems open, and its literally so blue it is black. And appears to be re-growing into mycelium on the insides where it stained blue/black. Not necessarily rotten, but all wet and degraded and it was apparently re-growing back into mycelium just from the humidity.
I'd suggest dehydrate to cracker dry, and vacuum seal them. Maybe even with some desiccant packs inside the vac sealed bag, so if any moisture got in, the desiccant will take care of it. I figured vac sealing them will break em up since they're like crackers. Ima either vac seal mine, or store in airtight containers with Damp-Rid in the bottom.

I always store with desiccant packs for extra security, I suggest everyone else do this as well.

They smelled a little weird when I opened the containers, but probably just because they were not dry enough. But I mean there shouldn't be any mold. Like I said some bend and some will break.
Just to be clear.(They were fresh 7 days ago btw) All of you are saying: 7 days in a plastic sealed container in the dark with minimal moisture content due to there water retention will not cause contamination and get you sick if eaten? As said earlier i used a fan for 72 hours. Now they will be properly dehydrated to eliminate all moisture along with proper storage.

Na not like garbage, or a sour smell like a sort of wet mush smell I guess. Since they've been sitting in a container for 7 days with partial moisture. I tossed them in the dehydrator already so they are already mixed up.

You should be good, eat one for a test before you go all out and eat a whole eighth if you want to be cautious.

How about this too, I know they exact weight of when I put them in the container, so after I get them out of the dehydrator I can re-way them to see how much total percentage or weight of water dissipated. And based upon that, that would tell me how much moisture was actually in the container or %. Going off that I could tell how dry they were upon going into the container and how much moisture was left. And whether or not that amount/% for that duration could cause contamination.

Ehh, if they weren't cracker dry there's always a small chance they could have contaminated, even if they were just slightly wet, you are probably good though, if you're worried do what I said in my previous post.

Even if they got contaminated it's like eating moldy bread or cheese it's ok if its a spot or two. I wouldn't think they would be all that bad after that long even if they did get something nasty growing on them.
I don't think it's how you're going to die from botulism.
