Need help stored mushrooms now moist

So I thought I had properly dried my little buggers,(I used a fan for about 72 hours until they were what I thought to be cracker dry) but I took them out of the storage container to find that they weren't, BUT they were very close to cracker dry. They've been sitting in a dark cabinet, in a plastic container for the past 7 days.

MY QUESTIONS: Can I still re-dry with a proper dehydrator and avoid any contamination and will they still be edible without risk of eating a contamination and getting sick? Are any risks involved with having almost dried mushies (probably 70-75% dry) sitting around for a week and then re-drying? And I know you can only get them down to about 10%.

Further Info: The majority will break like a cracker but others will bend, which is evidence of moisture. Operator error on drying them out properly.

To get the last bit of moisture out you usually need to use a desiccant or heat, like a dehydrator or oven.

If they were no good you would smell no good. The only times you'll find mold on a harvested mushroom is if the mold was already growing on the mushrooms when you harvested them. It can also happen if they're stored without being completely dried first but in most cases that will result in bacteria and not mold.
