It would be much appreciated. I have looked into securing a line to the steam outlet on my pc and using it as a steam generator. Only thing that's stopped me is the temp at which the steam would come over seems likely to be wayyy too hot and I haven't found a decent way to combat this yet.

Nah I don't see how. Just take the rocker off, attach a fuel hose or other high temp hose to the nipple with a simple clamp. I doubt the pc would even get up to 5psi as long as you didn't use a tiny tiny hose.

Doesn't it need to be in the 160 range for an hour? Do u let it go longer or do you find it works. Are you using coir or do you use poo too?

This is what I'm using right now and it works great but takes a good while to get up to temp. It's still so easy though it's set an forget and you can adapt it to whatever size container you want. I'm using 130ish quart cooler that I got for $50 at walmart. I did build one, back when I knew fuck-all about cultivation. It was my first attempt at "proper pasteurization."
My issue back in the day was that I did not know where my contams were coming from and it was simple enough to blame the bucket tek. So I spent a couple months messing with it and had a huge fail due to a contam'd LC...but being a noob, I continued to blame the pasteurization 
As psilly said, you don't need to worry about anything except for core temp. Let the outside of the bags get as hot as they need to. The interior is all that matters.
The thermophiles that survive the high temps will quickly spread to the whole substrate while it cools and again when you spawn.

Would this hold true no matter how large of a substrate you're attempting to pasteurize? Also then why the fuss about the bucket tek when boiling water gets poured in essentially partially sterilizing part of the sub?

Partial sterilization occurs when the core temp exceeds 170F for more than a few minutes.
The rest of the sub doesn't matter- see how RR's water is boiling rapidly in his pasteurization video? If anything but the internal temp mattered, I'd guess that would be done differently 
Bucket tek can go either way- too hot or not hot enough. Who's to say? Not only that, but there is no "core temp" in the bucket tek, per se...the coir heats unevenly while it expands. You mix it up, yes, but that doesn't give you a nice even temp the same way a hot water bath or steam bath does. And you don't get the rapid cooling effect you get from removing a bag or jar from the heat after your time is elapsed.
