I just googled "nutrients in coffee husks" and found a link that explains how coffee husks and also coffee pulp have high levels of caffeine and tannins which is harmful for mushroom mycelium. This article was for industrial shitake cultivation. It is possible to remove caffeine from the husks, but to me, it seems like a lot of work.

You mean the grounds? The husks are usually removed before roasting.
