Opinion on Lobster Mushrooms?

Hey there,

I've always been a bit sceptical about lobster mushrooms, considering the supposed uncertainty of what the victim they pick is. Today, I found a couple where I'm reasonably certain that it's Russula brevipes, which would be the classic species. I'm gonna prepare a small amount and test my reaction before going further down that road though - any ideas how to treat these things in the kitchen?

I found them to be way, eh, crispy, which I didn't really dig, even after they were cooked for quite awhile.  I dried 'em and figure I'll use 'em in stew someday.

I always just saute in a bit of butter for the first time, but maybe someone has a trick for these.

I will also confirm the crispiness of these mushrooms. After years of feasting on chaterelles the crispiness of the lobster mushroom was... off putting to say the least.

We sauteed them well and made a creamy mushroom soup with them as the main ingredient.

The word I was looking for was crunchy, not crispy.  Glad I'm not the only one, though.  I was looking at a high end website that sells fresh shrooms and they want $61 for 2 lbs of lobster, the mushroom.  I hope that includes shipping.  :rofl:

The Hypomyces that causes the deformation of R. brevipes only attacks
R. brevipes.

As to what to do in the kitchen.... If I am going to cook them
I usually make up a home made chicken pot pie and put them it.

Just in cubes. Just there for texture really. And a bit of color.
Kinda fun.

I was under the impression that the species-specifity of H. lactiflorum was very much disputed.

Have eaten them but not a big fan

West coast, don't think there is any problem with the host mushrooms

So I diced them, fried them up in butter with a few shallots, deglazed with white wine, added parsley, salt, pepper and a bit of tomato paste, simmered for a bit and used as pasta sauce. Pretty good, actually.

None of them are ever in eating condition when I find them.

50lb of them are worth roughly nothing/lb when they fall apart as you pick them up :frown:

So, having tasted the last batch, I did a little variation: Sauté shallots and garlic in butter, add diced lobster mushrooms, cook on high until they start losing liquid, add plenty of white wine, salt, pepper and some twigs of oregano, cover and simmer on low heat for an hour. Effing delicious.

Lobster mushrooms are practically tasteless but they do add a slight savoryness to any dish your add them to.  They are pleasantly crunchy and add a texture similar to watercress.  They will absorb whatever flavors you cook them in so I add them to things that need the texture they add and an added component of umami, they're particulary good in stir-fries.  If the host is soft or a bit manky, feel free to skin the red part off and discard the white insides, all the flavor they have is in the hypomyces, the host is tasteless to mildly unpleasant, especially if undercooked.  I've never had any problems with them, but the places I find them are full of r. brevipes so it's doubtful that they're growing on anything else.  :shrug:
