Chantrelles in October!? (North Georgia late season winners)

I was out doing some exploring the other day. Chanced upon this really interesting river valley with abundant fungal activity. Considering we hadn't had rain in over 2.5 weeks, it was a sight to see any mushrooms at all. As we hiked along this old logging road, I spotted a huge boulder with a small creek running underneath it. I thought it was really cool and scampered down off the overgrown logging trail to have a look. I ran around the backside of the boulder, and WHAMO! Huge clusters of golden chantrelles. They were all on this hillside covered in moss, with Rhododendron bushes everywhere. I was amazed. We packed up a backpack full of the best specimens, and went home to chow down! I thought the season was long over... This little micro-habitat niche must have the perfect conditions for them.

I'm mapping this location where I found these as my "Emergency Cache". I would imagine even in the driest years this spot would crank. Its good to have that kind of security when it comes to gourmet edibles.

I've got chicken of the woods and morels from this spring. Hoping to score huge on the Hen harvest this year.

I've got some chicken in the fridge, its been in there a month now probably but assumed it would be no good by now. I also didn't cook it first. Am i right?

Yeah I bet that its rotten or completely dried out. If you want to preserve it, a good way is to fry it all up, then seal it in olive oil and freeze it. Then you have a big block of frozen cooked mushrooms ready to be heated up in the oil. Thaw and go.
