Sour grain

Just note to share. I got some spawn that soured after I spawned it so I threw it out. I took it to the curb cause of the smell. Well I went to throw out some trash and even though they were cold weather strains (blue, Golden Oysters) and sat in the tropical sun for 2 days one of the logs had a boat load of Myc running through it. I was surprised and considered saving it but it still had a small sour smell and was not fully colonized so though I would just leave it.

Sour smells are usually indicators of fermentation. Some members here have experimented with fermenting grains rather than sterilizing, also i've read about fermenting straw for a week or more in water and that is a substitute for traditional pasteurization teks.

sour is not bad but since it was unintentional i would definitely keep a close eye on it and if the myc. runs its way through the sub then i bet most of the smell would go away.

Oysters will munch right through bacteria if you'll leave them outdoors.  Nothing is sterile outdoors.  If your grains sour in the jars, dumping them into compost or whatever outdoors will often yield a flush.
