can you get away with using a 8qt PC?

I would think, depending on the actual shape, it should hold 3-4 quart jars.
Yes it should work, if you don't mind doing 3-4 quarts at a time.

If the height will accommodate quart jars I'd say it would be fine. My PC only does four pints at a time n' needless to say it's ineffective for projects requiring larger amounts of spawn. It was, however, free. And plenty sufficient for cakes & things
Upgrading to a 23qt this week tho

I have an eight quart Presto that I bought ~10 years ago, I've never washed it. It fits five pint jars or 7 half pint. The description "eight quarts" refers to the amount of liquid it can hold if you were using it for regular cooking. You might get a quart jar or two in there if you lay them sideways, but I think the filters might get wet. I really miss my AA 921, which held sixteen pints or 8 quarts. I had to move suddenly and couldn't take it with me (someone got lucky on CL that day...)

Mine only holds four to six jars as well, and so far in the past few months coming back to the hobby, it's been more than enough to keep me going through my various experiments. It's enough for me at this point, and I'm sure you'll do fine with something similar for now.
