My first shiitakes!

Hey everyone! Here are some pics of my first shiitake mushrooms. I have 11 logs in a small stack in my back yard. I kind of forgot about them over the summer (I've been so busy!), but when I checked on them today they were fruiting!

March 15 for 10 of the logs and one is an older one that I made last June. I'm a little surprised that the ones I made this year are fruiting so soon, I was expecting them to be ready next year!

Hello! Your story is almost the same as mine! I grew some Shiitake on logs for the first time and they grew out in 6 months! I used sweetgum logs. And live in the southeast too. What type of logs did you use? Did you use dowels or sawdust to inoculate?
Congrats on your grow. I'm planning ahead for the next round come march '14.

I'm pretty sure they are sweetgum (The farm I made them at didn't really specify I don't think, but I've made others on sweetgum and oak and they look like sweetgum), I know that they're supposed to fruit earlier than oak logs. And I used sawdust spawn. I definitely want to get some more going, I have friends who want some and it's so nice to have them in my back yard!

After writing earlier, I stumbled upon this link on the shroomery detailing Shiitake on logs. Within it, I discovered some new info about sweetgum trees in particular.
"Red oak and sweetgum have softer wood and will produce mushrooms in 6 to 8 months. They also require more careful management since they are more susceptible to other fungi, bark peeling, and rapid water loss."

Hey, thanks for the link! I have noticed that other fungi seem to like to grow on my logs and they seem to dry out fast.
I just harvested another flush today! I sautéed them with some butter and garlic salt. So good!

Those look yummy!
I thought you needed to shock your log with cold water to trigger fruiting, seems it isnt needed in warm weathers?

While there are many more experienced LOG cultivators than I, I have read enough to know that you may be combining two or more methods for shiitake cultivation with that statement.
On the issue of cold shocking, it is a commonly used method when using sawdust in filter patch bags, however, it's done with cool/cold (not freezing) air, not cold water.
Which brings up the subject of water. It is another method used to initiate shiitake to fruit. But a soak in water will do, doesn't need to be cold water. This is a good method for logs at the proper time.
In nature, a nice heavy rain will also trigger fruiting if the logs are ready. There are also strains of shiitake that fruit at different temperatures naturally.
But there are other artificial methods to promote fruiting shiitake. It's different for logs than it is for sawdust bags.
