I know the logic behind it but I still have yet to see an uninoculated, PC'd jar contam.
I used to leave one or two out of each round of jars just to see. No contams after 2 months, be it in the incubator or at room temp
I don't doubt it could happen. I've just never personally seen it, and I tried for quite a while.
I guess I am using SFDs for filters though, they are top-notch. I could see something slipping through easier with polyfill or tyvek.

RogerRabbit said: The fact is, running an appropriate temperature for the species is very important. If we're growing E coli, we'd use a warmer temperature near our own body temp in order to favor the organism we want to grow. If we wanted to grow thermophilic bacteria, we'd run around 90F to 100F.
Most mushroom mycelium will grow fastest at around 80F. However, that can also stimulate competitor organisms. It's not just about sterilization because the material we use for filters is rarely 100% effective, especially those crappy postage stamp filters on spawn bags. We need to assume that contaminants will get into our media at some point and adjust temperature and other parameters to compensate.
For example, my Shiitake blocks spend three to four months in the bag before stripping the bags off to fruit. To compensate, I keep my colonization area at 60F to 65F, which means slightly slower colonization times, but substantially lower contamination rates during that three to four months.
For cubes, a temperature of 75F to 80F gives the best performance since even on a petri dish there is no increase in lateral colonization speed above 81F, and it begins to decline in speed at 83F. Temps above this amount stimulate molds while throttling back the cubensis. RR
What^^^^ he said^^^^^ Also I like to make my master jars around 3/4 full and my jars that are getting transferred a little less than that. That way every jar gets a good amount of grains..

Theres no myc in those jars to make the temps go up even higher than they are at whatever temp you have them set at

I've kept them in my incubator, which at one point was at 86F. I've kept them at room temp. I've kept them in my kitchen in the summer which gets to 90F sometimes.
Still no problems with the uninoculated jars or the inoculated ones
I think RR is on to something with the filter being the issue here. Like I said, I use SFDs. I bet I might see problems more often at higher temps if I used a worse filter material.

That's true. I havent really had issues with jars with bacteria from temps so much as there being way too much moisture in the jars (first few attempts at RGS were a bitch). But I definitely had issues with spawn bags and a blanket over them. Those guys were like hot to the touch, it was actually really astounding that myc can produce that much heat

Oh man, I know, right?
I never incubate my bags. I keep them in my fruiting room @ 70-75F tops.
