Name That Contam - On PF BRF Cakes

Pretty much every single one of my cakes hit about 98% colonization three weeks ago and then stopped, resulting in what is in the following picture...
They have small patches of uncolonized substrate with what looks like a slight brown tinge along the edges, with liquid clinging to it.
This mainly happened on the bottom edges of the jars. Flipping them for a couple of weeks had no effect.
No foul odour even at these specific sites.

Looks like bacillus. But you say it has no smell? I bet it does when you take it out. If it is bacillus, it will smell like rotten apples.

Nope. No bad smell at all. I have a freakishly sensitive sense of smell and the only thing I can detect from anywhere on any of the cakes is just a very fresh and rewarding mushroom odour.
My FC has a very very faint musty smell when I open it to fan it, but nothing that I wouldn't expect from any other space that is kept that humid with a bunch of wet vermiculite in it.
Could it be that I simply put too much water in the substrate? I did see a fair amount pooling in the jars while they were colonizing.
When I dunked and rolled, I found these uncolonized spots to be very soft and wet, so I removed them, but even this material had no odour. Since every single jar had this issue, I decided to put them all in the FC anyway and simply trash the whole thing (FC and all) if things went bad.
I went away for a while and the temp dropped in the FC considerably, so I saw no fruiting activity in two weeks. Light and temp are now at proper levels, so for now I'm continuing as planned and keeping any new work away from the area just in case.

Musty smell is not good. Probably bacillus. Time will tell. Also, your fc should have perlite in it. Not vermiculite. Amndd, don't trash your fc if the cakes go south. Waste not want not man. This world belongs to us all.

That's metabolites. When you find them bordering an uncolonized area like that it's because the mycelium is trying to isolate itself from a contaminant.

That could definitely play a role in it since it slow down colonization.

If your FC smells like that you either have something contaminated in it or it's seriously lacking fresh air. Make sure you have sufficient air holes in addition to fanning. Vermiculite is only used as part of a substrate or casing layer because it stores water instead of releasing it into the air rapidly. So if you're trying to humidify a FC be sure to use perlite in the chamber.

Not having the smell of course doesn't rule out bacteria in general. Bacteria can have wide variety or sometime no smell depending on species and the substrate it's growing on.

I would recommend bury those if you want to try to fruit them. They're just as likely if not more to produce mushroom outdoors. The FC will be fine to use again, clean it out good with soap and water.

Sorry, I meant the verm that's in the DEC and the roll. The FC is lined with perlite... two layers. One is in a deep baking pan with long bolts for legs because my FC is tall (attached).
If it goes south, I won't trash the actual FC itself, but I'll trash everything in it (perlite, cakes, lids, etc.) and do a major cleanup... and probably move the whole thing to a different room.

Interesting design. You know the perlite is a lot more effective when air can flow through it. If you added some holes to the sides and bottoms of those trays holding the perlite it'd be more effective and allow you increase your fresh air exchange while still maintaining the humidity.
I don't know if you have water pooled in there but if so that's probably the source of the smell.

I mean if you have the pans filled with water and not just moist perlite bacteria will grow in it. It doesn't happen with just perlite because the perlite is constantly drying and being rehydrated.
