The bottom hole is tight because I followed Franks tek http://www.shroomery.org/forums/showflat.php/Number/17332777#17332777. Notice how there are still less droplets around the bottom hole. I thought that indicated air flow.

It looks too tight to me, too.
Not every environment is the same. I stuff all my holes very loosely and I've been leaving one hole on top open with great results.

I know this is a noob question but without a hygrometer, how can I tell if the environment is not getting enough FAE? Aerial myc? Small fruits? Aborts? Mutants?

Look for rings of dryness around each polyfill stuffed hole.
There should be a 1/2" to 1" dry ring around each hole, and the rest of the tub should be covered in condensation, including the surface of the substrate.
Adjust the polyfill until this is achieved and you are almost guaranteed to be getting proper air circulation, focus more on this and less on knowing the actual RH in the tub.
Fruit size is usually dependant upon moisture content and genetics, not humidity.
Aerial mycellium can be a sign of insufficient FAE, or just genetics.
Mutants are genetic.

Fruits are small and crappy. There is no condensation really, anything on the walls is because of the time I misted. Doesn't that mean too much FAE? There are no droplets around any of the holes but like I said there wasn't condensation during colonization.

I'll loosen up the bottom holes but I'm afraid humidity is already too low since the side pinning looks healthier than the fruits on top

Well I opened up both top holes and loosened the bottom ones quite a bit and things are looking good. I've never had a pinset this good before but they're all growing fucked. None of them are opening their caps and some of the older ones look like they might have mould on the caps. If this is true I want to just harvest, and start over.
This mushroom is fresh, do you think it's sick? I feel like I should just chuck everything.

I will post a pic of the whole tub in a moment.

That other one just looks like an abort. You got a nice pinset going.
