Damn you google. Soaking red beans, help me out real quick.

So I've been making red beans and rice and the directions said to soak the beans overnight. It had other optional directions that didn't involve soaking however there was no instruction about not boiling after soaking.
I soaked for probably 10-12 hours and cooked it in a slow cooker. I'm afraid of getting sick though. I've been eating them and haven't gotten sick. Am I safe to eat them?
I google soaking them without boiling after, worded differently and couldn't get any results. So am I good with just soaking them?

I think the soaking is mainly to re-hydrate them so that they cook through in a reasonable amount of time.
...or do red beans have some sort of toxin?!?!
WAIT -- are you preparing castor beans for dinner?

kidney beans. They are toxic. Im gonna dig out the instructions on the package and make sure.
Crap I did miss something. After soaking they simmer for 2 1/2 hours. Im cooking them in a crock pot on low for 7 1/2 hours. How come I havent gotten sick? Did I not eat enough?

I think you'll get either constipation or diarrhea if you eat under cooked beans but I cant remember which one.

You soak the beans to make sure they don't take eight hours to cook. It won't be the beans in your food that kill you.

Never heard anything about kidney beans being toxic. The long soaking period is to soften them I'm pretty sure, pretty much the same as any dry beans. If you didn't wait long enough, they won't taste cooked. Changing the water a few times while soaking is supposed to result in less farting. Pressure cooking them avoids the soaking time I think, or at least reduces it.

The toxic compound phytohaemagglutinin, a lectin, is present in many common bean varieties, but is especially concentrated in red kidney beans. White kidney beans contain about a third as much toxin as the red variety; broad beans (Vicia faba) contain 5 to 10% as much as red kidney beans.[7] Phytohaemagglutinin can be deactivated by boiling beans for ten minutes; the ten minutes at boiling point (100 °C (212 °F)) are sufficient to degrade the toxin, but not to cook the beans. For dry beans, the U.S. Food and Drug Administration (FDA) also recommends an initial soak of at least 5 hours in water which should then be discarded.[7] If the beans are cooked at a temperature below boiling (without a preliminary boil), as in a slow cooker, the toxic effect of haemagglutinin is increased: beans cooked at 80 °C (176 °F) are reported to be up to five times as toxic as raw beans.[7] Outbreaks of poisoning have been associated with cooking kidney beans in slow cookers.[7] The primary symptoms of phytohaemagglutinin poisoning are nausea, vomiting, and diarrhea. Onset is from one to three hours after consumption of improperly prepared beans, and symptoms typically resolve within a few hours.[7] Consumption of as few as four or five raw, soaked kidney beans can cause symptoms.[7]

So you get yer beans up to 100c/whatever f and they're no longer toxic, right? In other words, there's nothing to worry so long as you're not crunching on raw beans?

I forgot that step. I just soaked over night and threw em into the crock pot. I haven't noticed any problems. I hope my poop end up being ok.
I think I'll just boil the batch for 10 minutes after its finished. And keep eating what I've made. If I notice it makes me sick I'll toss it. Fucking damn it!

You're supposed to soak kidney beans overnight and throw away the water because they do contain toxins that can upset your stomach

I did this. I threw away the water and rinsed the beans too. I'm still watching my digestion to see if it makes me sick. Beans and brown rice should make me some pretty solid poop. If it doesn't I've done something wrong. My farts are pretty badass right now though.

Soaking them before helps remove excess starch that can cause gas, and helps them cook easier.
I was a raw food chef for a while and I know what to not eat uncooked. Most beans fall into the must be cooked catergory, Kidney beans as well.
Gas is a sign of eating undercooked beans.

"Excess starch" is not removed. Starch is primarily what the bean consists of. Reisude that infuses into the water cannot be starch. What soaking does is it initiates an enzymatic process that begins to neutralize some of the antinutrients. Cooking achieves this also, but apparently soaking is necessary as well

Anything that requires cooking can also be accomplished via fermentation, from what I understand.
