There are sporeless strains for sure.
I don't know where to find them though.
Good luck. If you are reacting already to just two flushes I would be weary about growing them in the house.
You can develop some serious allergies. I bet you already knew that though.

The a trick for growing oysters in the house is having low temps 65F or less and harvest very early. There is very little spores when grown like this. And yeah king wont be a problem spore-wise, unless you let them get extremely overripe.
Kings are a tricky one. Im still experimenting but i have been getting good, yet inconsistent and SLOW results. Im growing 'em on oak pellets with %20bran and some gypsum. For the current strain im working with, i have been: incubating for 6 weeks, cold shocking for 4 days, exposing the top of the block to the FC, keeping temps in mid 60's F, lower humidities (%80-90 since i have an AC running.) They are taking 2-3 weeks to pin and 1-2 weeks to fruit out, but when they do i get .75-1lb/5.5lb block. The second and third flushes are coming in faster than the first. The 2nd and 3rd flushes are .2-.5lb each. Also some yield less then a lb and some more, so consistency is lacking; they're very slow as well. I would like to speed things up and get more even pinsets. I may try doing casings, but i have already got new strains going to test out as well.

Yes Aleon SLOW is a good adjective for Kings lol.
As far as harvesting them before spores become an issue . . . how will I know when the Kings are ready?

It is harder to tell when kings are ready, but generally while the edge of the cap margin is still curled under or flat. The main thing is keeping them firm, if the top of a cap gets slightly soft it means that it should have been harvested already.

Well I decided to pick the 4 larger Kings this morning since they seem to have stopped growing. The caps are still firm. I had hoped they would weigh more . . . maybe I should have let them go longer? Certainly not as large as the ones I've seen growing straight out of bottles! The four weighed only a quarter of a pound altogether.


Should I leave the smaller ones on the logs to continue growing, or am I supposed to harvest those now also? When I pulled these off, a bit of the base stayed on the log. Should I dig that out so as not to encourage contamination?
This forum is great!! WHere else could I ask these questions?

Those are great fruits! Congrats Judy! I wish I could answer your question but I cannot.
How will you prepare them?
I would suggest a soup like a ramen or miso because you have so few.
Slice them lengthwise so you can marvel at them while eating.. 
Will your boys (husband and son) eat mushrooms?

That's why people sometimes cut off some of the pins, you'll get less mushrooms but they'll be bigger. Basically your substrate has x amount of energy to make mushrooms with, so if you let all the pins grow out they won't grow as large as if you trim off some of them.
I think the bottles you're probably talking about are by Versicolor (if not, you should see his) Here's a quote from him in that thread:
