Need an opinion on this.. Metabolites? - Contam?

Rye grains colonizing has only been two weeks and five days and i think two out of three that are still colonizing might be contaminated now, There was four of them but one of them started off great and after a week i shook it up lightly like the rest of them to move the fungus around to spread, Then it just died and didn't grow from there. It had the chunks of mycelium still throughout the grains but was not taking at all and smelt sour. Now like i said there is three left that are colonizing still but two are looking different from the one that looks healthy from what i can see and i think Maybe just metabolites but i think i might be wrong.
I am just not sure, Could anyone give me some opinions on these? one of them doesn't have this problem at all.

You should lower your moisture content of your grains. What is your process?

TLDR.
Sounds complicated.
I used to do the soak, simmer, rinse as well. I went to the old school way after seeing how easy it is.
I just put a cup of dry rye into my jars then add 3/4 cup of water to each.
PC for 90 mins. When pressure is down pull jars and shake them up to mix the wetter grains on the bottom with the dryer grains on the top. I like to lay the jars on their side.
The moisture distributes itself throughout the grains from here.
Shake one more time an hour or two after the first shake. You just don't want to wait too long or else they will glue together a bit and make balls of grain.
There is only one other draw back to this. You cannot leave it sitting to cool. Therefore you cannot just forget about it when you turn the burner off.
Other than that there are only benefits.
Perfect moisture content. 1/3rd of the time. much less water used.
I prefer it now compared to the rinse, soak, simmer method. I do make a lot of jars and just don't want to take all that time and wasted water for those two benefits mentioned earlier.
Either way, lower your moisture content in your grains prior to PC if you plan to keep doing that method.
