so i'm looking into picking chanterelles to support myself through the fall and winter. i have found a really good place to get rid of anything i can pick at a good price. trying to figure out logistically how to make this work; kind of figuring i'll be living out of the back of my truck for the next 2 months. i figure i can store 2-3 days worth of mushrooms i've picked in the back and still have room to sleep up front. will it be acceptable to be out picking for 2 or 3 days then go drop them all off on the 3rd day or is that too long from picking without refrigeration (should be coldish outside so not exactly hot in the back of my truck)?

3 days would probably be the limit, yeah. Chanterelles usually keep quite well though, so that's an advantage. Of course, any seasoned picker or buyer will probably immediately see that they're not fresh, so it might influence the price you'll get for them.

i seriously can't imagine that every chanterelle picker drives out to the hills where they pick and back to town where they sell their crop every single day... that would be doubling travel and cutting picking time at least in half... anybody with experience commercial picking know about time frames?

Time-frames really depend on your resources... I prefer cutting out the mushroom buyers all together and going directly to the restaurants... finding restaurants local to areas your hunting is a smart way to deal with your product faster and fresher.. its more efficient, more profitable, more rewarding... Get them off daily.
But if your expecting to be further from your end-source, and you want them to keep as nicely as possible.. maybe using large insulated ice chests, lined with butcher paper.. maybe keep a moist paper towel in there somewhere, or even some dry ice wrapped in a towel and kept in a cardboard box... keep the chests out of direct sunlight, in the coolest location possible.. that is probably going to be your best bet if you want them to keep as nicely as possible..
If you are in a camper truck, maybe consider building a wood frame to sit above your wheel-wells, like building a sleeping platform. Cover it with a good dense foam sleeping pad for extra insulation/comfort, then use the storage space below for your mushrooms/chests.. keep your trucked parked in the shade so it doesn't heat up like a solar oven...
There are a lot of methods, you just gotta get creative.

i know the refrigerate really well. you can keep em for a week i know and theyre still very fresh. im skeptical to suggest an ice chest as the melting/wetness could make them mushy. and im skeptical to suggest dry ice as that might too cold and could damage them. and since your not willing to make extra trips the ice idea isnt really feasible anyways. maybe experiment with small quantities of dry ice with an insulating barrier so they cant damage the chants.
this is a toughy that might require some serious experimentation beforehand. it sounds like experimenting up there could ruin you whole haul.
basically what im saying is i have no idea how to help you...
